Wherein I try a new pork chop recipe

I don’t cook often, but when I do, I like to try something different when possible. While perusing some older Good Eats episodes, I came across the pepper episode where Alton cooks Crock Pot Pepper Pot Pork Chops. We just happened to have some pork chops thawed in the fridge, so I thought, why not?

I did as the user suggestions said and cut down the salt in the brine and did not salt the chops after pulling the chops from the brine. I can safely say they are VERY delicious. They may be too spicy for some, but clearing off the onions (and excess pepper) from the chops does cut down on the spiciness.

Now, I told you that story to tell you this one:

When I was plating, I opened a cabinet only to have a spice container fall and break a plate. Wanna guess the spice? Heh… to put it one way:

We had a plate fall victim to the ravages of thyme.
